How Do You Sei?

Wild Ale Aged on Grape skins

We went on a blending mission to create this deliciously tart farmhouse. Starting with a base of our robust saison Sei Barili Vol. II, we then aged it on Merlot grape skins which sparked a refermentation from the wild grape yeast. To hit that perfect light pucker level a small dose of our barrel aged blonde sour was added. Notes of wine and pear dominate the aroma with a crisp acidity on the palate.
